Absinthe
- Spirits
- Alcoholic
Absinthe is an aromatic spirit made from a neutral alcohol base flavoured with herbs, chiefly grand wormwood, green anise and Florence fennel, and traditionally linked to France and Switzerland. It may be clear or tinted green, and it turns cloudy when water is added because the anise oils fall out of solution. The taste is bittersweet and herbal, with a pronounced liquorice note. In cocktails it is used in very small measures, as in the Sazerac or the Corpse Reviver No. 2.
Strength: usually 65% ABV.

Anise liqueur (pastis) works
You lose the wormwood bitterness and the high strength: the drink is sweeter, lighter and less intense, but the anise note remains.
