Cloves are the dried flower buds of a tropical tree, Syzygium aromaticum, native to the Maluku Islands of Indonesia. Their intense, spicy aroma comes mainly from eugenol, which is why only a very small amount is needed. In the kitchen they season meats, marinades and cooked fruit, and in hot drinks they are often paired with lemon and sugar. In the Pisco Punch, some modern reconstructions muddle them in the shaker or add them to the pineapple marinade.
