Crème de cassis is a French blackcurrant liqueur, made by macerating the berries in alcohol and then adding a large amount of sugar. It is tied to Burgundy and Dijon, where the modern version spread in the mid-nineteenth century. The colour is a very deep red, the texture thick and syrupy, the flavour intense blackcurrant, sweet but with a tart edge. It is the key ingredient of the Kir and the Kir Royale, mixed with dry white wine and sparkling wine respectively.
Strength: usually 20% ABV (legal minimum 15%).
