Demerara rum
- Spirits
- Alcoholic
Demerara rum comes from the coastal Demerara region of Guyana, where molasses or other sugarcane products are fermented and distilled. Producers use historic stills, some of them wooden, that give very different styles. The flavour is full and dark, often smoky, with an almost burnt edge that adds complexity. In mixing, especially in tiki drinks such as the Zombie, it adds body and depth; very high-proof versions, known as 151, also exist.
Strength: usually 40% ABV (legal minimum 40%).
Used in 1 cocktail.
