Espresso is a concentrated coffee, born in Italy, made by forcing very hot water under high pressure through finely ground, tightly packed coffee. A shot is usually 25–30 ml and is topped by crema, a layer of dense foam typical of this method. In cocktails it brings bitterness, roasted aroma and a texture that, shaken hard with ice, builds a foamy head. It is the heart of the Espresso Martini, where it should be freshly made.
