Lemon sorbet is a frozen dessert made like gelato but with a base of water, sugar and lemon juice instead of milk, so it contains no dairy. In Italy it is often served in small portions between courses to refresh the palate. It is the main ingredient of the Venetian Sgroppino, where it is blended with vodka and prosecco into a cool, tangy cream. It is best used very cold, straight from the freezer.
