Palo Cortado sherry
- Vermouth & fortified wines
- Alcoholic
Palo Cortado is a rare style of sherry, the fortified wine of the Jerez-Xérès-Sherry appellation in Andalusia. It begins as a young wine suited to becoming fino, but soon loses its layer of yeast, the flor, and then ages in contact with oxygen like an oloroso. The result is a dry, amber wine with the richness of oloroso and the finesse of amontillado, and notes of walnut, wood and caramel. In cocktails such as the Sherry Cobbler it brings depth and a long finish.
Strength: usually 19% ABV (legal minimum 17%).
