Peychaud's is a gentian-based aromatic bitters created in nineteenth-century New Orleans by the Creole apothecary Antoine Amédée Peychaud, who sold it as a tonic. Today it belongs to the Sazerac Company. Compared with the more common aromatic bitters it is lighter and more floral, led by anise, with cherry, orange peel and a hint of mint over a bitter base. It is the essential ingredient of the Sazerac and also appears in the Vieux Carré, always by the dash.
Strength: usually 35% ABV.
