Raspberry liqueur
- Liqueurs
- Alcoholic
Raspberry liqueur is made by macerating raspberries in alcohol and adding sugar; the sweeter, denser French version is called crème de framboise. Some black-raspberry products add blackberries, vanilla, honey and a little cognac. The colour ranges from ruby red to deep purple, and the flavour is ripe red berries, sweet with a light acidity. In the French Martini it meets vodka and pineapple juice; a few drops also colour and perfume a glass of sparkling wine.
Strength: usually 18% ABV (legal minimum 15%).
Used in 1 cocktail.
