White sugar is almost pure sucrose, extracted from sugar cane or sugar beet and refined into crystals. Ordinary granulated sugar has crystals of about half a millimetre; the finer kind, called caster or superfine, has smaller grains and dissolves faster. Its taste is sweet and neutral. In classic cocktails it is dissolved in the glass with a little liquid, as in the Daiquiri or the Sherry Cobbler, or in the hot coffee of an Irish Coffee; today many bartenders prefer syrup.
