Tabasco is the hot sauce made by the McIlhenny Company of Avery Island, Louisiana, created in 1868 by Edmund McIlhenny. It contains just three ingredients: fully ripened tabasco peppers, salt and distilled vinegar, and the pepper mash is aged for up to three years in white oak barrels. It tastes sharp and tangy, with a clear but moderate heat. A few drops are enough to bring warmth and lift to the Bloody Mary and the Virgin Mary.
