Blackstrap rum
- Spirits
- Alcoholic
Blackstrap rum is an informal name for very dark, molasses-forward rums, taken from blackstrap molasses, the thick syrup left after repeated crystallisation of sugar. In practice many bottles are young rums coloured with caramel and flavoured with molasses rather than made purely from it. The taste is bittersweet and robust, with notes of burnt sugar, liquorice, coffee and a vegetal edge. Bartenders use it to add depth and bitterness, as in the Jungle Bird or as a float on tiki drinks.
Strength: usually 40% ABV (legal minimum 37.5%).
Used in 1 cocktail.

Black rum great swap
A good black rum gives similar colour and molasses richness, with less of the bitter, vegetal edge.
