Dark crème de cacao
- Liqueurs
- Alcoholic
Dark crème de cacao is a sweet brown cocoa liqueur that, despite the name, contains no milk or cream. It is generally made from a distillate of cacao beans, sugar and sometimes vanilla, with the colour coming either from the beans themselves or from caramel. Compared with the white version it tastes bolder, closer to dark chocolate, with hints of coffee. In rich, creamy cocktails such as the Alexander it adds body and a brown tint.
Strength: usually 25% ABV (legal minimum 15%).

White crème de cacao works
The chocolate is milder and the drink stays pale, so colour and intensity change but not the sweet structure.
