Dry sherry
- Vermouth & fortified wines
- Alcoholic
The dry sherry called for in recipes is usually a fino, a fortified wine from the Jerez-Xérès-Sherry appellation in Andalusia, made largely from Palomino grapes. It ages in cask under a layer of yeast, the flor, which shields it from oxygen and gives aromas of almond, bread and yeast. It is very pale, bone dry and saline, at about 15% ABV. In cocktails it replaces or partners dry vermouth, as in the Adonis and the Bamboo.
Strength: usually 15% ABV (legal minimum 15%).
Also known as: Dry sherry (fino), Fino sherry
