Fresh ginger is the rhizome of Zingiber officinale, a plant originating in Maritime South-East Asia. Its hot, aromatic taste comes from gingerols, which heat turns into even more pungent shogaols. In cocktails it is used in thin slices muddled in the shaker, as in the IBA Tiki, or boiled with honey and water to make the honey-ginger syrup of the original Penicillin recipe.
