Peach purée

Peach purée is made by blending ripe peaches that have been peeled and stoned, often with a little lemon to slow oxidation. The peach was domesticated in China in Neolithic times and is now grown throughout temperate regions, in white, yellow and red-fleshed varieties. It tastes sweet and juicy, with gentle acidity and a full aroma of summer fruit. In cocktails it adds fruit and a velvety texture, as in the Peach Caipiroska.
