Pineapple is the fruit of a tropical plant native to South America, around the Paraná and Paraguay river basins, and was already grown by Native Americans before Europeans arrived. Its yellow flesh is sweet, tangy and highly aromatic, and contains bromelain, an enzyme that breaks down proteins. In cocktails it is used in chunks, muddled or blended with ice, or as a garnish of wedges and leaves. It stars in the Missionary's Downfall and enriches the Jamaican Mojito.
