Scotch whisky is a grain spirit that, by law, must be distilled and matured in Scotland for at least three years in oak casks and bottled at no less than 40% ABV. Single malt comes from one distillery using only water and malted barley; blended Scotch combines malt and grain whiskies. Styles run from soft and fruity to peaty and smoky, with notes of malt, toffee and spice. In cocktails a blended Scotch is the most flexible base, and a little peated whisky adds smoke, as in the Penicillin.
Strength: usually 40% ABV (legal minimum 40%).
