Strawberry syrup is a sugar syrup flavoured with strawberries, sold commercially with concentrated juice or made at home by simmering chopped strawberries in sugar and water and straining the liquid. It is deep red, sweet and fruity, with aromas recalling fresh strawberries and jam. In cocktails it brings sweetness and fruit together, blends straight into the drink and takes the place of simple syrup, as in the Jamaican Mojito.
