Watermelon is the large fruit of a trailing vine in the gourd family, domesticated in north-east Africa, in what is now Sudan. Its red flesh is about 91% water, with a sweet, fresh and delicate taste. In cocktails it is muddled in cubes, blended into a purée or pressed and strained as juice, which should be used fresh because it spoils quickly. It gives colour and summery freshness to the Watermelon Mojito.
