Raw cane sugar is an unrefined or only partly refined sugar whose crystals keep some of their molasses. That molasses gives it its colour, from pale gold to dark brown, and its flavour, ranging from the light caramel of paler sugars to the deep, almost liquorice-like notes of muscovado. Some brown sugar on the market is simply refined white sugar with molasses added back. In cocktails it is muddled with lime and fruit, as in the Jamaican Mojito and the Peach Caipiroska.
