Egg white

Egg white is the clear, protein-rich part of the egg. In cocktails it matters mostly for texture: shaken with the other ingredients, it adds body and a silky foam on top, which grows fuller with an initial shake without ice, known as a dry shake. Half an egg white, about 15 ml, is usually enough for one drink. It is the hallmark of sours and fizzes, such as the Amaretto Sour, the Clover Club and the Illegal.

Used in 9 cocktails.
