Clover Club
Raspberry, gin, velvet elegance.
Gin, raspberry syrup, lemon and a touch of egg white, shaken and served ice-cold. The bright pink colour and silky foam hide a dry, fruity sour, one of the great classics of the late nineteenth century.

The story
Origins
ProbableA plausible account, without definitive proof.
The Clover Club takes its name from a Philadelphia club founded in 1882 by journalists, which met at the Hotel Bellevue and later welcomed lawyers, bankers and businessmen. In 1931 Albert Stevens Crockett, in Old Waldorf Bar Days, credited its creation to the bar of the Bellevue-Stratford, but the club's own records do not mention the cocktail. The earliest known recipe, unearthed by David Wondrich, appears in the New York Press of 23 June 1901 and is linked to Michael Killackey of the Waldorf-Astoria, who helped popularise it in New York. Recipes in bar manuals of 1909 and 1910 followed. Very popular before Prohibition, it returned with the classic cocktail revival.
