Tommy's Margarita, aperitif cocktail. Glass: Rocks glass

Tommy's Margarita

Pure agave, fresh lime.

A pared-back Margarita that drops the orange liqueur: 100% agave tequila, fresh lime and agave nectar. The sweetness of agave lifts the tequila's character instead of masking it, in a clean, direct drink served on the rocks.

The story

Origins

DocumentedOrigin attested by written sources of the time.

Tommy's Margarita was born in San Francisco with Julio Bermejo, behind the bar of Tommy's Mexican Restaurant, opened by his parents Tomas and Elmy Bermejo in 1965 in the Richmond district. In the late 1980s Bermejo committed to 100% agave tequila and replaced the simple syrup in the house Margarita with agave syrup, made from a plant related to tequila's own. Dates vary: Difford's gives 1987-88, other sources the 1990s, and Punch describes an evolution over about a decade. The name 'Tommy's Margarita' was coined by British bartenders Henry Besant and Dre Masso, who helped spread it worldwide.
