Mezcal
- Spirits
- Alcoholic
Mezcal is a Mexican spirit made from 100% agave, drawn from many species of the plant, of which espadín is among the most widely used. The hearts of the plant are usually cooked in earthen pits, then crushed, fermented and distilled. This cooking gives it a distinctive smoky, earthy character, with a vegetal and sometimes sweet backdrop that shifts with the agave and the place. In cocktails it adds smoke and depth, either as the base or as a modifier alongside tequila and other spirits.
Strength: usually 42% ABV (legal minimum 35%).
Also known as: Espadin mezcal
Used in 3 cocktails.

Tequila works
The mezcal smoke is lost: the drink keeps its structure but is cleaner and more vegetal, close to a different cocktail.
