White cane sugar
- Other
- Non-alcoholic
White cane sugar is refined sugar made from sugar cane: almost pure sucrose in white crystals, without the molasses that gives raw cane sugar its colour and flavour. Once refined, it is essentially identical to white beet sugar. Its sweetness is clean and neutral, leaving room for the lime and the spirit. It is the sugar named in the official Caipirinha recipe, where it is muddled with lime, and it is used the same way in the Caipirissima and the Caipiroska.
Used in 5 cocktails.
