Gin is a clear spirit made by flavouring agricultural alcohol with juniper berries, which must remain the dominant taste, together with botanicals such as coriander, angelica and citrus peel. It descends from Dutch genever, first made as a medicine and later popular in England, where it took its short name; the English dry style is now the one most used behind the bar. The aroma is of juniper, with citrus and herbal notes. It is the base of the Martini, Gimlet, Tom Collins and gin and tonic.

Strength: usually 40% ABV (legal minimum 37.5%).
