Orange juice
- Juices
- Non-alcoholic
Orange juice is pressed from sweet oranges such as the navel, which is large, sweet and pleasantly fresh in acidity. Packaged juice is pasteurised, from concentrate or not, and often has flavourings added back to replace the aroma lost in processing; freshly squeezed juice is closest to the fruit. In cocktails it brings sweetness, body and gentle acidity, though it is not sour enough to act as the main souring agent. It appears, for example, in the Abbey, the Acapulco Gold and the Bee's Knees.
