Pineapple juice
- Juices
- Non-alcoholic
Pineapple juice is pressed from the flesh of the fruit, native to South America between southern Brazil and Paraguay. Packaged juice is usually canned, pasteurised and often reconstituted from concentrate; many bartenders prefer fresh juice, which tastes livelier. Sweet and tropical, with good acidity, it forms a characteristic froth when shaken. It is a staple of tiki and tropical drinks such as the Acapulco Gold, the Amaretto Colada and the Bahia.
